Olivier Maubert?s garden is home to horned beasts who, to his great delight, feed on his vegetable garden.

Nostalgic for the times he spent collecting snails in the wild as a child, Olivier has now made it his profession: heliciculturist.

Since 2014, he has raised over 375,000 snails on his farm. Two species: the Gros gris snail and the Petit gris snail, each destined for different uses.

Snail breeding requires technique and patience. On his farm, he manages and controls the entire production chain: birth, growth and processing.

And in the kitchen, he offers recipes from his snail farm: snails in shell, snail croqu?in, etc.
